Easily this is defined as a producer or manager of the ship's Alcohol stores. In the rogues this position is the bartender, ship drink creator and keeper etc. As a Specialized rank they may be officers or crew as the captain sees fit. Possible subs are brewers, rumrunners and bar wenches.
